Connecting the food and the people who eat it.

We serve regional dishes from all over Italy, mainly as set courses. Above all, we cherish the cooking of the Marche, which is still little known in Japan.

But a dish you do not know remains unfamiliar, even when the plate arrives at your table. A dish name you have never seen. An ingredient you have never heard of. Where the dish comes from, and how people there have eaten it. Only when you know these things does your first bite become a true discovery: a delicious flavor you have never tasted.

Helping you with that encounter is what being a cameriera means to me.

CAMERIERA

What is a cameriera?

Cameriera is the Italian word for a woman who serves at a restaurant. In Italy, too, explaining the menu and suggesting dishes and wines are considered important parts of the job.

A cameriera does not just carry the plates: she connects the food and the people who eat it.

Explaining the dishes

From the Italian name alone, it is hard to imagine what a dish is like. So I describe it by comparing it with dishes and flavors you already know, or with how it looks.

Take testaroli, for example: a chewy pasta made from a crêpe-like batter that is cooked in a frying pan, cut and then boiled. It is an unusual pasta, but hearing it described this way makes you look forward to it before you even taste it.

IL VINO

Wine to go with the food

I choose the wines too. When I recommend one, I explain which part of the dish goes with which part of the wine.

Seafood
Its saltiness, with the acidity and minerality of a white wine
Pasta with tomato sauce
Its acidity, with the fresh, concentrated fruit of a light red wine
Grilled beef
Its slightly iron-like flavor, with the dry, spicy aromas of a red wine

Every time I taste the chef’s dishes, I try wines with them to keep learning. We always have 5 wines by the glass and 20 by the bottle.

We ask that you book online. By phone, we can answer questions about same-day availability. Please also call if you are running late for your booking, need directions, or are unsure how to book.

Only on “à la carte days” do we take phone bookings for parties with children. (On regular days, we can only seat guests of junior high school age and older.)
