What is Marche cuisine?

The Marche, on the Adriatic Sea, has many dishes born of its land. From the sea come brodetto and mussel zuppa; from inland come dishes made with wheat and livestock raised close to nature, such as Vincisgrassi alla maceratese and rabbit porchetta. We serve fascinating Italian dishes that are hard to find in Japan.

Sharing its name with our restaurant, it is the most famous traditional dish of the Marche.
Pasta sheets rolled so thin you can see your hand through them are layered 8 or more times with a ragù of beef, pork and chicken, liver, chicken feet and more, simmered in Marche red wine, then baked in the oven. In 2022, it was also registered as a TSG (Traditional Speciality Guaranteed; STG in Italian).

Seafood baked with herbed breadcrumbs
A dish often seen at restaurants on the Marche coast. Seafood is generously topped with Marche-style breadcrumbs mixed with herbs we grow ourselves, then baked in the oven. The herbed breadcrumbs soak up the flavor of the seafood, so even the crumbs are delicious: a very Italian way of cooking.

Olive all’ascolana
Pitted olives stuffed with a mixture of cheese and minced meat sautéed with aromatic vegetables, then coated and deep-fried. The spices vary from cook to cook; we add lemon zest and nutmeg, just as we were taught by the chef during our training in the Marche. It is a street food often sold at festival stalls.

Cappelletti in brodo
A filled pasta whose name means “little hats”. Minced meat sautéed with aromatic vegetables is wrapped in pasta dough and served floating in broth. We make our broth from prosciutto, Parmigiano and whole chickens for a deep flavor. In the Marche, it is a classic pasta eaten at Christmas.

Fried lamb on the bone
When it comes to lamb in the Marche, this is the dish. We marinate the lamb in herbs, coat it in breadcrumbs and fry it. The coating seals in the flavor of the lamb, making it wonderfully juicy.

Fried tagliatelle
A dish from Monterubbiano, in the province of Fermo in the southern Marche. Handmade tagliatelle and béchamel sauce are shaped into rounds, coated in breadcrumbs and fried. We hear there is even a fried tagliatelle festival once a year.
VINO MARCHIGIANO
Wines of the Marche

The best-known wines of the Marche are Verdicchio for white, and Montepulciano and Sangiovese for red. Verdicchio is grown widely across the Marche, and it is distinctive for showing a different character in the hills and by the sea. To us, it shows clearly how much climate and terrain shape a wine. For red, Rosso Piceno, a blend of these 2 grapes, goes very well with our food. Both the whites and the reds are smooth and easy to enjoy with a meal. We also have wines made from other native grape varieties, and we hope you will enjoy them.
