BENVENUTO / About usA small restaurant with 14 seats

The chef and a member of our staff in the restaurant

My passion for cooking was sparked by my grandmother’s home cooking, and I went on to train in Italy. Our whole team looks forward to welcoming you and sharing the flavors of Italy here in Shizuoka.

The chef, who trained in the Marche, serves simple, heartwarming traditional dishes.

Italian-made plates, the colors of the walls and floor, small things brought back from Italy, even the music: please enjoy the atmosphere of a restaurant in Italy along with your meal.

MARCHE / Marche cuisineThe Marche, still little known in Japan

A lane in the Marche

Set between the Adriatic Sea and the mountains,
it is a quiet land, off the tourist trail.

In Shizuoka, no other Italian restaurant serves the cuisine of the Marche, in central Italy.

Our dishes include “Vincisgrassi alla maceratese,” which shares its name with the restaurant; seafood baked with herbed breadcrumbs; olive all’ascolana (stuffed fried olives); cappelletti in brodo (small filled pasta in broth); fried lamb on the bone; and fried tagliatelle.

Please enjoy Marche cuisine that keeps its traditional techniques and spirit, with a touch of the chef’s own sensibility.

What is Marche cuisine?

IL NOSTRO PENSIERO / Our philosophyMarche cuisine that starts with the producers,
making the most of ingredients grown with care

Checking on the vegetables growing in the field
Horie-san showing us around the henhouse
Tending vegetables in our own garden
Handmade pasta

We grow some of our vegetables in our own garden, and make our bread, pasta and salsiccia (Italian sausage) in-house.
For prosciutto, duck and fish, we choose products whose makers we know.

We grow our own vegetables because the ones we can buy do not always meet our needs.

In our garden, we grow Italian vegetables that are hard to find in Japan, such as radicchio, radicchio di Castelfranco, fennel and zucchini flowers. We use no pesticides or chemical fertilizers.

Philosophy

PROPRIETARIO / Owner-chefTomoki Masuda

The chef in the kitchen
Beginnings as a cook
Learned the basics of cooking at French and Italian restaurants in Shizuoka City (around 2005–2012)
Experience in Tokyo
Learned authentic Italian cooking at “VACANZA,” a pizzeria and southern Italian restaurant in Ebisu (around 2012–2015). Realizing the importance of training in Italy itself, went to Italy
Training in Italy
Stayed in Italy for about 3 years, touring traditional restaurants, mainly in the Marche, and taking cues from starred restaurants and Slow Food guides. Worked at “Galliano,” a seaside restaurant, and “Ponterosa,” a traditional restaurant, both in the Marche. At Ponterosa in particular, through its agriturismo (a farm, guesthouse and restaurant in one), came to know the whole process from producing ingredients to cooking them, in harmony with nature. Living in the Marche deepened a passion for home-grown vegetables and traditional Italian cooking, and brought an awareness of Slow Food (around 2016–2018)
Opening the restaurant
After working at restaurants in Shizuoka City, opened “VINCISGRASSI, a Traditional Italian Restaurant of the Marche” in August 2022
